Portuguese Stew for the all family

In Portuguese, this kind of stew is called Jardineira. It is extremely tasty and a perfect dish for the all family. That's what I have done.

The baby was needing food and we didn't have dinner. Therefore, I thought nothing better than a Jardineira.


Ingredients:

Ingredients for Jardineira

  • 500gr of beef
  • 150gr carrots chopped in cubes
  • 125gr green beans chopped in cubes
  • 125gr peas
  • 1 onion chopped in small pieces
  • 50gr chouriço 
  • 400gr of pealed tomatoes
  • 1 garlic cloves chopped in small pieces
  • 1 bey laurel leaf
  • 1 cube of beef broth
  • 1 branch of parsley (Neapolitanum Group)
  • 1 table spoon of lard
  • olive oil
  • 1/2 glass of white wine
  • 500dl water
  • 300gr potatoes
  • 300gr zucchini
  • milk
  • butter
  • salt
  • nutmeg
  • white pepper

Place the olive oil, the lard, the bey laurel leaf, the onions and the garlic in a big Duch Oven (or a large pot, here I used a large pot) and bring it to fried. When the onions are golden, place the chouriço(I have used bacon this time, couldn't find chouriço). After 2 minutes place the tomatoes and let it fried. Put the tomato sauce and the beef broth. Let it boil.

Place the meat and let it change color. When it does, include the parsley, the whine and half of the water. Let it cook and add water when you see that it is necessary.

In another pot cook the potatoes in a bit of salt water. 5 minutes later joint the the zucchinies.

In a smaller pot, if you still have one, cook some dark noodles. Don't forget to don't use salt. The noodles are for your baby's stew.

After the meat is already cooked, place the carrots, the green beans and the peas. Mix it with the meat and let it cook for 10 minutes.

When the potatoes and zucchinies are cooked, make into a mashed. Mix a table spoon of butter and bring it to cook during 10 minutes in medium heat. Don't forget to stir it constantly until it gets dry. When it gets the consistency you like spicy it with nutmeg and a little bit of milk. Let it boil a bit and serve.

So here is the point we divide the food. In a small bowl, place 2 Ladles of stew with the less sauce possible. Be careful to don't have any bacon (or chouriço) on the baby's food. Add the noodles. Mash it until it gets the correct texture. Add a bit of the sauce, in case it is too thick.

As the baby food is ready, it is now time to finish up the adults stew. Spicy it with salt, white pepper and nutmeg. Let it cook for 2 minutes and serve with the mashed potatoes/zucchinies.
