Couscous my way

"Yummy"...
Last Friday before Easter... Still we are not allowed to eat meat as you know... Therefore, I have tried to cook couscous.

It was my first time cooking couscous so I was not sure how to do it. Luckily it ended up very well :-) I mean, it was a little bit too spicy for me, but my husband loved it and that is what it matters for me :-)

Here you go:
Ingredients:

Ingredients
  • 1 cup of olive oil
  • 1 cup of finely chopped flat-leaf parsley
  • 1 garlic clove chopped in small pieces
  • 1 bey laurel leaf
  • 1 diced tomato
  • 1/2 diced red paprika
  • 1 shred carrot
  • 1 eggplant chopped in cubes
  • 1 zucchini chopped in cubes (leave the green on)
  • 2 small dried chillies
  • 1/2 glass of white whine
  • 90 gr couscous
  • 200 ml of water
  • table salt
  • black pepper
  • 1 cube of chicken broth

Firstly boil the water and place the couscous on a bowl. Add the boiled water to the couscous and prepare the vegetables.

In a wok, place the oil, the garlic, the parsley and the bey laurel. Let it fried a bit. Once the garlic is golden, add the tomatoes, mix it and add the paprika, the eggplant and the zucchini. Mix everything and let it cook for 1 minutes.

Place the salt, black pepper the wine and the cube of chicken broth. Mix everything and let it cook for about 5 minutes.

In the meantime take the water way from the couscous. I didn't squeeze it to take the water away, so it is up to you...
Ready...

After the 5 minutes, add the couscous to the vegetables. Mix everything together and let it cook during 2 minutes  and turn the heat off.

It is ready... Serve it and
