Finally the Green Lasagne

According to my husband (Love), the Lasagne was specially good yesterday.
Yummy...

First, I will tell you the story of my Lasagne: Once a year, perhaps, I would make Lasagne. I didn't really like to do it, as was never ending up good. Either the sauce was not good enough, or the pasta not cooked... whatever, there was always a problem... So I would only cooked if Love would ask me.

However, when my dad came to visit the other day and brought his girlfriend, which is vegetarian, I thought on making a Green Lasagne. I have searched for a recipe that was not with Spinaches, I wanted something different. So then I found one that I thought it could be "Yummy".


I have cooked it, everyone loved it. And today, is one of our favourite meals. Love is all the time asking me to do it... Every time it goes to the table he says that it prefers this to a meat/fish meal. For someone that loves a good stake, you can imagine how tasty it is!

I have changed a bit the original recipe, perhaps it is the reason of having so many friends... Try it and let me know ;-)

Ingredients:

  • 2 onions
  • 2 garlics
  • olive oil
  • 1 eggplant
  • 2 zucchinis
  • 1 paprika (I've used yellow, but the red is nice as well)
  • 2 carrots
  • 1 can of peeled tomatoes in pieces
  • Lasagne noodles (the recipe asks for green, but I have used normal one and with no need to go to cook first)
  • Cheese
  • 500ml Béchamel sauce
  • salt
  • white pepper
  • nutmeg
  • oregano
  • Mushrooms (we don't like it, but the recipe includes them too)

Preparation:
Preheat the oven to 200°C.

Firstly chop the onions and garlics into small pieces. Place the oil, the onions and the garlics in a pot and bring it to fried in medium hit.

In the meantime prepare the vegetables. Peel the eggplant and the zucchinis. Cut it in cubes. Please keep an eye on the onions!When they are yellow, include the tomatoes.

Wash the paprika and cute into small pieces. Peel the carrots and shred them.

Stir the paprika in the tomato during 5 minutes. Include the rest of the vegetables (and mushrooms if you would like), mix it and let it cook. 
Again, 5 minutes later place the shredded carrots. Involve everything.  Put the spices, as you like.


The recipe says that at this point you should stir 250ml from Béchamel sauce and some shred mozzarella cheese.

Turn the heat off.

Ready to be eaten...
In a Lasagne Pyrex, spread the sauce onto bottom;top with cheese and Béchamel sauce; top it with a layer of Lasagne noodles. Repeat the process until you arrive at the top of the Pyrex. Finish it with the rest of the Béchamel sauce and rest of the mozzarella cheese.

Bake it until it gets golden.
