Cold Soup

I was so looking forward to write you, you guys have no idea. The thing is that with the little one at home, I just simply can't sit in front of the computer. :-)

Anyway...
The soup can be served cold or warm. However, I really wanted to try it cold. I have been thinking that when the Summer comes (in case it ever comes...) a cold soup would be a nice alternative.

Unfortunately was not a very warm day, but nevertheless we've tried it.

Reactions?! lol. Was funny... One says: "it is cold!", the other says: "Mama, heiß" (for the little one, cold and warm means the same :-) ), one says again: "it is cold!"... When I am ready to go and warm it up it starts: " Uhmmmm, it's so tasty!".

So yes people, cold soup it is a good option for the Summer.

I have found the recipe in a Portuguese website for Bimby recipes. I didn't change it that much, so you can trust it works. And so, as you can imagine, I used my best-cooking friend.
It is for sure not very difficult to do it in a normal pot, but I have to admit that I didn't try it. What we can do is the following: next time I make it, I will try it without my Bimby and tell you how it goes. What about that?

For now, here you go:

Ingredients:

  • 1 Onion
  • 1cm slice of fresh Ginger, peeled (I used a little bit more)
  • 25g Olive oil
  • 300gr Carrots chopped in 4 pieces each.
  • 500gr Water
  • 100gr Mango
  • Salt, Pepper and Nutmeg
In the Cup you put your onion (I only had small onions, so I used two) and the slice ginger. Then you select speed 5 for 5 seconds. This option will chop both of the ingredients.

Afterwards you add the olive oil and let it cook for 5 minutes, at 100°C and speed 1. Then, add the carrots and the water; again let it cook at 100°C and speed 1, but this time for 20 minutes. Meanwhile, peel your mango, cut 100gr and eat the rest (Yummy!).

Once the machine gives you tells you that is ready, add the Mango. It is now time to blend it. I did it 30 seconds speed 3, 30 seconds speed 5 and 1 minute speed 7. Time to check if the consistency is according with your taste and flavor it with Salt, Pepper and Nutmeg. Let it cook for more 2 minutes, at the same temperature and speed.

As I said before, we had it cold. But if you would like you can also serve it immediately. To make the supper more interesting for the little one, I added a few croutons at the table.
I tell you, it was really nice :-)

PS: Germany played yesterday eve, that is way I Though would be fun to have the German colors for dinner :-)
