Tabbouleh my way

Once I had Tabbouleh in a restaurant in Frankfurt. I loved it as it is very refreshing dish, perfect for a warm evening. 

The other day, my husband was grilling for dinner and I prepared the salad to go with. While we were eating (and by the way, the meat was fantastic... thank you!), the salad reminded me the great taste of Tabbouleh. Since then, I have been craving for it!

Result: Yesterday, I have made Tabbouleh for dinner. I called this post Tabbouleh my way, as I have not followed any recipe but my instinct. And I tell you: It was fantastic and light! Perfect!

Here you go:
Ingredients:

  • 1 Cucumber
  • 2 Onions
  • 4 Tomatoes
  • 1 Paprika
  • 200g Couscous
  • 400ml Water
  • 2 Lemons
  • 1/4 cup of Olive oil
  • Coriander
  • Parsley

Firstly boil the water (I used an electric water boiler). Place the couscous on a bowl and once the water is boiled, add it to the couscous. Place half a lemon juice. Let it rest.

In the meantime, wash and chop the cucumber, the onions and the paprika really finely. Place all the ingredients in a large bowl.

Wash the tomatoes. Take the seeds away and chop the tomatoes really finely. Place it in the large bowl.

By now, your couscous must have doubled the size and in consequence you don't have more water. Place the couscous in the salad bowl. Mix all the ingredients.

Ready...
Chop really finely a lot of Coriander and Parsley. The herbs will give a very good taste to the salad, so I recommend to use a lot of both ingredients. Add as much as you like.

To finish, add the olive oil and the juice of 1 and half lemon. Temper with salt and pepper if you wish. Ready...

The ingredients will be enough for 6 people. We were two, so we are still going to have it tonight ;-)
